Crepes Without Milk (Dairy-Free Crepes)

Crepes folded into quarters with berries and maple syrup, beside a carafe of oat milk and a bowl of batter

Out of milk, or cooking for someone who avoids dairy? Crepes don’t need milk at all. Plant milk works almost exactly like dairy milk, and even plain water makes good crepes, a little lighter and crisper at the edges. Swap the butter for a neutral oil and the whole batch is dairy-free.

Everything else stays the same as classic crepes: the same proportions, the same rest, and the same quick cooking in a hot pan.

Tips for dairy-free crepes

  • Choose unsweetened milk. Sweetened and flavored plant milks brown faster and can make crepes stick.
  • Oil the pan lightly. Wipe on a thin film with a paper towel. Too much oil fries the edges.
  • Don’t skip the rest. It matters just as much as with dairy milk. The flour needs time to hydrate.
  • Blend it if you like. The blender method works the same with plant milk.

Dairy-free crepes are delicious the classic French way, with lemon and sugar. See Lemon Sugar Crepes and swap the butter for a little oil.

Frequently asked questions

Which plant milk is best for crepes?

Unsweetened oat and soy milk are closest to dairy milk: creamy enough for tender crepes and neutral in flavor. Almond milk works but makes slightly thinner crepes. Avoid sweetened or vanilla milks for savory crepes.

Can I make crepes with just water?

Yes. Water makes crepes that are lighter, slightly crisper and less rich. A little extra oil in the batter keeps them flexible.

Are these crepes vegan?

No. They're dairy-free but still contain eggs. For crepes with no dairy or eggs, you need a different batter, usually thickened with a little cornstarch or chickpea flour.
