Blender Crepes: Smooth Batter in 2 Minutes

A blender jar of crepe batter beside a stack of thin crepes, one folded with jam

The quickest way to make smooth crepe batter is to let a blender do it. There’s no whisking, no lumps, and no extra bowl to wash: you blend the batter in the jar, rest it there, and pour it straight into the pan.

The only trick is the order. Put the liquids in first and the flour on top, so the flour gets pulled down into the milk instead of packing into the bottom of the jar.

Tips for blender crepes

  • Liquids first, flour last. It’s the difference between a smooth batter and a jar with a cake of flour stuck under the blades.
  • Blend briefly. 15 to 20 seconds total. Over-blending makes crepes chewy.
  • Rest it. The batter will look foamy right after blending. After 15 minutes the bubbles rise and pop, and the crepes cook up smoother.
  • Pour from the jar. The spout makes it easy to pour the same amount each time. Swirl the jar gently before each crepe, since the flour settles.

Frequently asked questions

Do blender crepes need to rest?

Yes, at least 15 minutes. Blending whips air into the batter, and resting lets the foam settle so the crepes don't come out full of holes.

Can I blend the batter too long?

A little extra blending is fine, but running the blender for a minute or more develops the gluten and can make the crepes chewy. 15 to 20 seconds is plenty.

Can I use an immersion blender?

Yes. Put everything in a tall container, liquids first, and blend until smooth, moving the blender up and down.
